Any quantity off large egg. Bring to a boil a large amount of water-say in a pasta pot-enough to totally submerse the eggs. You can add salt if you want, but I don’t really see it penetrating the egg shell. When the water comes to a boil add eggs , and cook for exactly 12 minutes. Place strained eggs into an ice bath for 15 minutes-peel! You will see they peel with alacrity! And they yield perfect pastel-bright yellow yolks-not a shade of grey. Perfect recipe! Thanks Phyliss!
