Unearthed a Gem from the Cellar: 2004 Guillemot Michel Bourgogne-”Champ Choley.” Tears of Gold!!

I was thrilled to find a bottle of this languishing in my little, dark basement cellar last night.  This is one of my all time favorite producers from the Macon.  The wine is imported by one the greatest importers of our time,  Kysela Pere et Fils,  out of Virginia.  I had the great fortune of visiting this pristine estate back in 2002, and again in 2003.  We bought what we could of these wines and they were an absolute joy to sell.  The wines here represent, and explode with a sense of place.  They undergo 100% Malolactic Fermentation. There is no use of oak here, and the wines pull off an amazing depth of power and elegance without it.  I’m looking at my tasting notes from 1-08-02, and I’m finding similarities.  Shimmering appearance  of a light honey from the South of France.  In the mouth Power and Grace.  Brilliant acidity! Akin to tart green apples drizzled with honey.  These wines are masterful, and difficult to come by.  Search them out, and if you find them, buy them on the spot.  The 2004 was in its glorious prime, and the tell tale 2004 acidity has done wonders in keeping this wine ticking.  What a delicious discovery here last night.  I only wish I could remember the name of the incredible hotel in which we stayed the day of visiting this estate.  An awe invoking converted castle from the 1400’s somewhere in the Macon.  Ask the locals if in the area.  Here is the link to Kysela Pere et Fils ( a name to look for on the back of the bottle!) and some really fascinating literature on the legendary Guillemot-Michel.  Sante!
